Structure of sucrose is shown below


On hydrolysis of sucrose, we get an equimolar mixture of αD(+)Glucose and βD()Fructose. So, we get two moles of monosaccharide upon hydrolysis of one mole sucrose. Hence, it is a disaccharide.



Since the reducing groups of glucose and fructose are involved in glycosidic bond formation in sucrose.
