Agar-agar:

Agar, also known as agar-agar, is a jelly-like material made of polysaccharides that are extracted from some species of red algae's cell walls.
Algae is mostly of the genera Eucheuma, Gelidium, and Gracilaria.
These tiny algae are high in mucilage, a form of fiber, and have a reddish stem.
